PORTIONS FROM THE FRONT

The front parts carry the most flavour, and the closest to the real flavour of the rabbit. Slower cooking methods are recommended and these portions works extremely well in stews and curries due to the flavour it will contribute to the dish.

Specific cuts from the fronts is great for braaing, baking and in general pre-cooked, marinaded, brined and prepared as part of the cooking process. The amazing hopperwings is from this section and a huge crowd pleaser.

PORTIONS FROM THE SADDLE

Known as the fillet or the loin, this is the most delicate part of the rabbit. It calls for quicker cooking methods and very sought after products originate from this section. It is extremely versatile and generally stimulates creativity, resulting in a culinary experience.

The mightiest part of the rabbit by far. Thicker meat parts require medium cooking times and medium heat settings. Ideal for oven bakes, casseroles or potjies, braaing and combinations.

THE WHOLE RABBIT

Exactly how they are cooked traditionally. With all the portions and cuts available we do think it is a little bit yesterday, but if you want to make a pie or cook them whole, the traditional option will work best in a pot or over the fire.

We have created a whole deboned version to keep up with the times and add a little flair back to the whole rabbit. There is a certain amount of excitement when cooking a rabbit over an open flame. It is to be expected as it brings back a lot of memories for many and a whole new experience for others.
